Why Lalou?

Lalou Bize-Leroy is one of the most influential figures in the wine world. Winemaker, manager, owner of three vineyards in Burgundy. One of the first biodynamic women, sensitive to the energy of the place. For us, Lalou means quality, authenticity, and a balance between form and content.

For me, Lalou is a dream come true - the dream of a shared space where, together with Norbert, we could use our best skills and competencies. Wine understood as a cultural space - breakthroughs, trends, and schools - is for me one of the most exciting forms of experience. As a theater expert, I have been describing phenomena at the intersection of visual and performing arts for many years. I started to use this perspective as a creative director in my agency, Grupa Wzgórze. I have implemented major brands and corporations projects, primarily in visual identification and design, web projects, and communication strategies. I graduated from the Theater Academy in Warsaw and doctoral studies at the Institute of Art of the Polish Academy of Sciences. As a winner of the Ministry of Culture and National Heritage scholarship, I worked on the perspective of post-modern theater in Poland. Now, I can fully use my knowledge - extended by postgraduate studies in management and trend watching & future studies - in my work at Lalou.

Norbert Dudziński

I have been thinking about Lalou for many years - about a space focused only on wine: without rush and compromise. With area for tasting, the attention that wine requires, with diversity within the categories I deal with, and finally - with a place to age the wine under optimal conditions. I am a sommelier specializing in several French regions: Burgundy, Champagne, Jura, and Loire Valley, as well as natural, biodynamic, and orange wines. I have international certificates: A.S.I. Diploma, Court of Master Sommeliers, WSET. I worked as a Head Sommelier in 3 Michelin stars and ranked 5th in The World's 50 Best Restaurants - including Geranium restaurant in Copenhagen. It was an essential and inspiring experience as I managed one of the world's largest and best wine collections. In 2020, I was awarded the prestigious title of Prix au Sommelier by the International Academy of Gastronomy. I am a regular collaborator of Magazyn o Winie Ferment and the ambassador of Star Wine List in Poland - an international guide to the most exciting places for wine.
